Midweek Update

What is everyone up to these days? Just wanted to give a midweek update, since I’m sure you can’t wait to hear what we’re up to! 😄 All joking aside, one of things I’m very thankful for during this time is the internet! So thankful for the ability to keep in touch with family and friends and see what everyone is doing.

At our house, I’ve been very busy cooking! For some reason, Nick and Seth feel that they need cooked breakfasts since they’re at home for the time being! Now don’t get me wrong, I enjoy cooking and baking, but I usually never make breakfast! In my defense, no one would ever get up in time to eat it, anyway! 😄

So far I’ve made pancakes, sausage links, scrambled eggs, grits, biscuits, banana nut muffins, and apple cinnamon muffins. (Biscuits and sausage links were frozen, though! 😄) I thought I was doing pretty good. And then Seth started talking about how good the sausage gravy was at our friends’ house in SC! As if that wasn’t bad enough, yesterday he was talking about when my father-in-law comes to visit, and all the delicious food he makes us! Haha! It’s all in good fun, though, because they seem to eat everything I cook pretty quickly!


Nick’s Upcoming Birthday

Speaking of cooking, Nick’s birthday is coming up this weekend, and I’m super disappointed that we can’t have family and friends over to celebrate! I’m planning to cook his favorite meal, though, and bake his favorite cake: hummingbird cake. To be honest, I had never even heard of a hummingbird cake until I met Nick! Thankfully, no birds are harmed in the making of this cake! 😄 I’m not even sure why it’s named that, though.

Hummingbird cake isn’t just something you can pick up a box mix for…it’s a truly made-from-scratch cake that includes bananas and pineapple. I’ve made this cake three different years for this guy, and he had the audacity to tell me it was really good, but not as good as his grandmother’s hummingbird cake! 😄😆 I didn’t even make it last year, but this year I’ve decided to make it again…and I was able to get his grandmother’s recipe from his aunt. Here’s hoping it turns out good! I mean, this recipe has crisco in it, and I’ve never in my life put that in a cake, so it will definitely be different than the others!

    A midweek update…we are tired of staying home! I’m actually sewing Easter dresses for the girls. It doesn’t matter that we have to have drive in church. They have to have new dresses… It’s tradition!
